SIMPLE SYRUP
0.75 OZ
FRESH LEMON JUICE
1 OZ
FRESH LIME JUICE
1 OZ
EGG WHITE
3-4 DASHES
ANGOSTURA BITTERS

METHOD

Combine pisco, syrup, lemon juice and egg white in a mixing glass with ice and shake long and hard to completely emulsify the egg. Strain into glass and garnish with bitters on foam.
